Pumpkin Spice Pancakes
You’ll love this easy camping recipe! Pre-assemble the dry ingredients in a gallon size food storage bag. When you’re ready to make pancakes, simply combine the contents of the bag with some wet ingredients. The batter whips up creamy and smooth and is ready for a hot griddle!
Dry Ingredients
In a bag, add together:
- 2 cups all purpose flour
- 3 Tbs brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 heaping tsp pumpkin pie spice
- ½ tsp salt
When ready to make pancakes, combine the pre-mixed dry ingredients with the following:
- 1 ½ cups milk
- 1 cup canned pumpkin
- 1 egg
- 2 Tbs vegetable oil
- 2 Tbs vinegar
Before you object to the vinegar, let us explain. It reacts with the dry ingredients to help give your batter some fluff since the canned pumpkin tends to make it a little dense. Trust us – you won’t regret that splash of vinegar!
Whip together the batter and pour onto a hot griddle in pancake-sized puddles. Just like regular flapjacks, you’ll want to cook each side until it’s dark golden brown and flip halfway through. Just be careful – the color of the pumpkin changes the batter so it may look “golden brown” according to normal pancake standards without being totally ready to flip.
Top your pumpkin cakes with butter, maple syrup, and some chopped pecans. Yummm.
Pumpkin Spice Coffee
If you want to pair your pumpkin pancakes with your own version of a pumpkin spice coffee, read on! The secret? It’s way easier than it sounds.
Ingredients:
- Regular coffee grounds
- Pumpkin pie spice
Simply add pumpkin pie spice to your coffee grounds. That’s it. You’ll want to mix ½ teaspoon pumpkin pie spiece per 6oz cup of coffee. You can pre-mix the spice in with your coffee grounds, but we just make coffee as usual, measuring the grounds into the coffee filter, and then measure the pumpkin pie spice accordingly.
Top your cuppa pumpkin joe with half and half or the creamer you like best.
