Camping Recipe

Smoky Gouda Burgers

Ingredients:

  • 1 pound 85/15% ground beef, divided into 4 equal portions
  • 4 slices smoked Gouda cheese
  • 4 Brioche or sesame seed buns
  • Bread & butter pickle chips
  • ½ cup French fried onions
  • 1/2 cup baby bella mushrooms, thinly sliced
  • Worcestershire sauce, to taste
  • 2 Tbs butter
  • 1 Tbs olive oil
  • Salt & pepper to taste

Directions:

  • Bring your heat source to medium-high. You can use a grill, flat top griddle, or even pan-fry. Your choice! Just get the heat fired up!
  • Get the French fried onions ready by lining a paper plate with a paper towel, then sprinkling the French fried onions evenly over it. Microwave for 15 seconds to get them crispy (you’ll hear them sizzle, too!) and set aside.
  • Form four beef patties from the ground beef and flatten evenly to about 1/3” thickness all the way across. Finish by seasoning with salt and pepper.
  • For pan frying or a flat top griddle, add the butter and olive oil to the cooking surface. Obviously skip this step if you’re using a grill with a grate!
  • Add the burger patties to the prepared surface and give them a generous splash of Worcestershire sauce.
  • Grill until cooked through, flipping them occasionally so they don’t burn. Cook them to doneness by temperature, which is 155-160 degrees for well done.
  • Once the burgers reach your desired level of doneness, but while still on the pan, top each with a slice of Gouda cheese. Remove from heat and let the Gouda get all melty on the burger. Yum!
  • Add the sliced mushrooms to the remaining beef drippings in the pan or on the griddle and saute under tender, about 2 minutes.
  • Place the buns under the broiler and toast them until golden while the mushrooms are  sauteing.
  • Assemble: bun, burger, sweet pickle chips, mushrooms, French fried onions, and bun top. Enjoy!

My family never gets tired of the classic grilled cheeseburger, but this camping recipe changes it up just enough to make it new and interesting.
